Method for making sesame paste flower roll
1. Put the yeast powder into a bowl, add 50g warm water, stir it evenly, let it stand for 10 minute, then pour it into the flour, then pour in the remaining warm water (different flours have different water absorbances, so you can master it flexibly), stir it with chopsticks while pouring, then knead it into smooth dough, and put it in a warm place to ferment it to twice the size of the dough. The picture of dough has been taken countless times, so this time it is omitted. You can click on four tips for steaming super-soft steamed bread (with fast and perfect fermentation method) to see. )
2. Stir the sesame paste with a little cold water and salt into a thick paste (if the sesame paste itself is only consistency, you don't need to add water and salt to stir it evenly)
3. Take out part of the dough and knead it into dough.
4. Roll it into large pieces and then spread it with sesame sauce.
5. Roll the dough covered with sesame sauce into strips.
6. Then cut into uniform dosage forms.
7. Take two piles together, and then press them in the middle with chopsticks so that the knife marks on both sides face up.
8. Then pinch both sides with your hands and stretch slightly.
9. Rub the two sides of the bottom of the sesame paste picture scroll relatively, and the blank of the sesame paste picture scroll will be ready.
10. Put cold water in the steamer, grease the steamer, then put green rolls on it and cover the lid. Let stand for15min, and then steam for15min.
Cooking tips
After I made it myself, I summed up the main points of several steamed sesame paste rolls, which are delicious and beautiful, and shared them with you:
1. Different brands of sesame paste have different consistency, so it is best to choose famous brands or buy freshly ground sesame paste. Look at its ingredient list when you buy it. It is best to buy only sesame seeds as raw materials, not mixed ones;
2. Because the consistency is different, if the sesame paste you buy is very thick, you'd better stir it with a little cold water, then add salt and mix well. You can also add brown sugar without salt. Sesame paste is too thin to form a flower roll, and it is too dry to spread on the dough, so try to spread it yourself, that is, the consistency is just right. I made it a little thin and it didn't roll well, but it was delicious.
3. Warm water will make your hair faster, but you must master the temperature. Just put your finger in the water and it feels warm but not hot.
4. If you can't make the pattern, you can cut it directly and put it in the pot, or you can press it directly with chopsticks.
5. When steaming flour food, steam it with cold water, so that it can continue to expand when heated slowly during the interview, and the finished product is more fluffy and soft;
6. You can make several more at a time and freeze them in the refrigerator. You can use a steamer to heat it thoroughly when eating. It's good to make breakfast. It's fast and nutritious.
