The legend of emperor Qianlong and beggar chicken: there is a famous dish in Beijing cuisine with an interesting name. Also known as beggar chicken and rich chicken. There is a reason why this dish is named after completely different rich and poor words:
Beggar chicken originated in Hangzhou, Zhejiang. Poor refugees, that is, "beggars" or stolen and begging chickens. It is cooked by a hot local saying, and it is originally an unpretentious street dish.
When Emperor Qianlong of Qing Dynasty toured Jiangnan incognito, he accidentally left his tattered clothes in the street. One of the beggars felt sorry for him and gave him beggar chicken, which he thought was delicious. He is tired and hungry. Of course, he thinks chicken is very delicious. He was anxious to ask its name, but Huatou was embarrassed to call it beggar chicken, so he praised it as "rich chicken".
Ganlong said that this "rich chicken" is delicious. Afterwards, I learned that this tramp is now the emperor. This "beggar chicken" has also become a "rich chicken" because of the emperor's golden mouth. Become a famous dish.
2, Song Taizu, obsessed with soybean oil rolls for life
Song Taizu and the story of soybean oil roll: soybean oil lotus root roll, commonly known as soybean oil roll, is a traditional folk vegetarian dish in Xiaogan, Hubei. Because Xiaogan is famous for producing high-quality lotus roots, locals like to cook all kinds of lotus root dishes. Especially every year, almost every household should prepare delicious soybean oil dishes.
According to legend, Zhao Kuangyin in Song Taizu grew up in poverty. In his early years, he used to wander around the country, selling cars for a living. On a cold winter day, he pushed a wheelbarrow from the ancient "King of Chu" (now Yunmeng in Hubei Province) to Xihu Village in Xiaogan. When the cart was full of lotus roots in the West Lake, it was already snowy evening, cold and hungry, so Zhao Kuangyin pushed the cart to stay in a restaurant by the lake.
Eager to eat food and wine to keep out the cold, however, in those years, due to years of hunger and frequent wars, the court banned folk brewing. In addition, there was no one in the pub at this time, and only two pieces of unused sporadic materials such as soybean oil skin, onion and ginger were left in the kitchen. The clever chef was moved by this scene and showed his cooking skills, so he improvised.
That is, the lotus root used in wheelbarrow is washed, peeled, cut into filaments, salted slightly, shaken well with seasonings such as onion, ginger, shredded mushrooms and a little flour, rolled tightly with clean cloth and kneaded into linear strips, then wrapped with soybean oil coated with batter, sawed into "round" tubes and fried.
In a short time, the restaurant brought a plate of "soybean oil lotus root roll" and a pot of old wine brewed by private houses and served it on the table. Zhao Kuangyin was very grateful, so he drank alone and praised while eating: "Soybean oil and lotus root rolls are good wines, which are also good for the stomach. Now there is no worries." As a result, the delicious "soybean oil lotus root roll" came out and passed down all the way.

Ganlong and Phoenix Egg, the story I want to tell: Phoenix Egg is a traditional snack of Han nationality in Lanxi, Zhejiang. It is said that the phoenix egg has good nutrition and is a remedy for headaches. Therefore, there are not a few people who love this bite.
It is said that the folk custom of eating phoenix eggs in Jinhua and Lanxi is related to Emperor Qianlong. Emperor Qianlong went down to the south of the Yangtze River and was separated from his entourage in Jinhua and Lanxi. Hungry and tired, he stopped at a farmhouse by the roadside to beg for something to satisfy his hunger. The farmer was poor and had nothing else, so he took out some hatching eggs in the chicken house and cooked them for him. Unexpectedly, the more you eat, the more delicious it is, and it is named "Phoenix Egg".

4. Liu Bei and "Dragon and Phoenix Wedding Cake"
Liu Bei and "Dragon and Phoenix Happy Cake": Dragon and Phoenix Happy Cake is the traditional name of Jianli County, Hubei Province. It tastes sweet and crisp, and it is as big as a moon plate, each weighing one catty and eight liang. The pattern of the cake surface is one of the characters of "happiness", surrounded by dragons and phoenixes, which symbolizes good luck, so it is called dragon and phoenix wedding cake. Because it has such a beautiful symbol, local weddings and festive homes always use it to entertain relatives and friends and share joy.
How did the Longfeng wedding cake come from? A local folk song tells the answer. "Liu Bei went to Wu Dong to get married, and then the dragon and the phoenix matched the wedding cake." The story goes like this:
During the Three Kingdoms period, Sun Quan, the monarch of the State of Wu, adopted the plan of Zhou Yu, the viceroy, pretending to marry his sister Sun Shangxiang to Liu Bei. In fact, he wanted to trick Liu Bei into Wu Dong and exchange Liu Bei for Jingzhou.
Sun Quan's engagement with Zhou Yu is false, so they dare not let Wu Guotai, courtiers and ordinary people know, lest it become a reality. Zhuge Liang saw through his plot at a glance, so he played along and sent Zhao Baoyun and Liu Bei to Jiangdong.
Before the trip, Zhuge Liang made a large number of dragon and phoenix wedding cakes. After Zhao Yun arrived in Jiangdong, he distributed them to the subjects in Jiangdong. The subjects in Jiangdong got the wedding cakes of dragon and phoenix, and found that Liu Bei had come to Wu Dong to get married. They quickly told each other, and immediately the whole city knew, even Wu Guotai in the deep palace knew.
Wu Guotai was interested in Liu Bei on a blind date with Kanluoji, so he agreed to the marriage. Sun Quan and Zhou Yu are self-defeating. Because it is the dragon and phoenix wedding cake that contributed to this marriage, it has also spread among the people.
5. Pearl jade white jade soup
Zhu Yuanzhang and Zhuyu Baiyutang;
According to legend, Zhu Yuanzhang was poor when he was young and never had enough to eat. /Kloc-When he was 0/7 years old, he was homeless because his parents died of the plague. In order to have a meal, he was forced to become a young monk in his hometown Huang Jue Temple.
However, there was a famine in his hometown soon, and the incense in the temple was neglected, so he had to go out for alms. In the meantime, he went through many vicissitudes, and often didn't eat a bite of rice all day. Once, he asked for nothing for three days in a row, hungry and angry, and fainted in the street.
Later, she was rescued by an old woman passing by and taken home. She put the only piece of tofu at home with a handful of spinach and red roots and green leaves, poured a bowl of leftover porridge and cooked it for Zhu Yuanjin. After eating, Zhu Yuanzhang was in good spirits and asked the old woman what she had just eaten. The old woman took pleasure in suffering and joked that it was called "Pearl Jade White Jade Soup".
Later, Zhu Yuanzhang defected to the Red Scarf Army, became emperor, and tasted delicious food all over the world. Suddenly one day he was ill and couldn't eat anything, so he remembered the "pearl jade white jade soup" he had when he was begging in his hometown and immediately ordered the chef to cook it for him.
The chef had no choice but to mix pearls, jadeite and white jade to make soup. After Zhu Yuanjin tasted it, he felt nothing was right. In a rage, he killed the chef and let a chef in his hometown do it.
The cook is very clever. He thought to himself, since the emperor is not interested in the real "pearl jade white jade soup", I might as well take a chance with an imitation. So he replaced the pearls with ichthyosaurs, sliced red bell peppers with flying (flying is ruby), spinach with Cui (Cui is emerald), tofu with white jade, and fish bone soup.
After offering this dish, Zhu Yuanzhang felt delicious as soon as he ate it, just like the old woman gave it to him, so he ordered it to be given to the chef. After the chef was rewarded, he went home sick and passed this dish that Zhu Yuanzhang liked to eat on to Fengyang's father.
