1, braised carp
Ingredients: carp, onion, ginger, garlic, dried pepper, pepper, soy sauce, sugar, cooking wine, white vinegar and salt.
Steps:
(1) Onion, ginger, garlic, dried red pepper, star anise and pepper are ready.
(2) A carp, scaled, eviscerated and washed. Cut a knife at the head and tail, both sides are the same, remove crow's feet, hold it with fingernails, twitch outward, and remove wake-up lines.
(3) cut a knife on the fish body, both sides are the same, and put some salt and cooking wine on the fish body for curing.
Heat the wok with high fire, put in oil, add carp when the oil is hot, turn to low heat and fry until the fish are golden on both sides.
(4) Put the onion, ginger, garlic slices, dried red pepper, star anise and pepper into the pot and stir-fry.
(5) Add sugar, stir-fry until the sugar is dissolved, and cook white vinegar, cooking wine and soy sauce and stir-fry. Add water and bring to a boil.
(6) Add the fried fish, and after the fire is boiled, turn to low heat for 15~20 minutes, then dry the soup and sprinkle some shredded onion.
2. The fish scales are frozen.
Ingredients: carp, cucumber, onion, ginger, garlic, Chili oil, salt, monosodium glutamate.
Steps:
(1) Remove the weighing pan with your thumb. Take fish scales for later use;
(2) Put the fish scales into a colander and rinse them with clear water;
(3) Drain the washed fish scales. Pour into a clean container;
(4) adding ginger slices and onion segments into the fish scales to remove the fishy smell of the fish scales;

(7) Add clear water to the fish scales, which is only lower than the fish scales 1cm. If there is too much water, fish scales are not easy to form;

3. Fried fish with garlic
Ingredients: carp, dried pepper, pepper, salt, cooking wine, sugar, rice vinegar, soy sauce.
Steps:
(1) Put carp in the pot, add clean water without fish, and add a few slices of ginger, so that the fishy smell can be removed and the fresh taste can be extracted;
(2) After the fire is boiled, it can be turned off by boiling for another 5 minutes;
(3) When cooking fish, you can prepare ingredients, cut garlic cloves into fine grains, and cut dried peppers into strips;
(4) All the cooked carp are fished out, moved to a plate, and then poured with juice mixed with salt, cooking wine, white sugar, rice vinegar and seafood soy sauce;
