Italian tomato juice

* Detailed formula:

3 kg of tomato sauce, 6 kg of water, 2 kg of tomato, 30 g of carrot, 50 g of sugar, 60 g of butter, 50 g of onion, 40 g of garlic, 50 g of white vinegar, proper amount of salt and proper amount of chicken essence.

* production process:

(1) Cut tomatoes with a cross knife, then blanch them, tear them off, cut them into pieces, and squeeze them into juice with a juicer. You don't have to peel it. If you use it at home, you can save some ingredients. If it is used for business, it needs to be peeled.

(2) Put carrots, onions and garlic into a blender and beat them into paste for later use.

(3) Pour butter into the pot, heat until it melts, and stir-fry carrots, onions and garlic with low heat.

(4) Continue to add tomato sauce and stir-fry until it bubbles, then add tomato juice and stir-fry until it boils and bubbles.

(5) Immediately pour clean water, bring to a boil with high fire, turn to low fire and cook for half an hour. When the sauce in the pot is slightly thick, add sugar, white vinegar, salt and chicken essence and stir for ten minutes.

Black pepper sauce

* Detailed formula:

Black pepper 100g, butter 150g, garlic 250g, onion 250g, red sauce 2.5 kg, brandy 25g, salt 100g, clean water 60kg, beef bone 5 kg, pig skin 2kg, chicken skeleton 2kg, beef100g.

* production process:

(1) Take a clean non-stick pan, pour in chopped black pepper and stir-fry over low heat until it is dry. Pour it out for use. The purpose of this is to make the taste of black pepper stronger.

(2) Put the beef bone and chicken skeleton in the oven, bake the surface slightly, and take it out. Make the taste more intense

(3) Take a soup pot, pour clear water into the pot, turn the fire to low heat, add beef bones, add gelatin and chicken skeleton into pig skin, cook for two hours (water evaporates to about 50 kg), and take out the ingredients.

(4) Garlic and onion are cut into powder, and beef is cut into powder.

(5) Take a clean pot, add 50g butter, add minced garlic, stir-fry until fragrant, and pour into the soup pot. Add chopped black pepper to the soup pot, stir-fry onion and beef with butter, pour into the soup pot, and continue to cook on low heat for one hour. Milk sauce

2 fresh tomatoes, 2 green peppers, 200g honey, 20g pepper seeds, 300g water olives, 300g black olives, 40g onions, 30g sugar, 50g olive oil and 0/0g salt/kloc.

(1) First, beat tomatoes into paste, and then beat water olives, black olives and onions into powder respectively.

(2) Pour olive oil into the pot, add chopped green onion and green pepper, stir-fry until fragrant, then pour chopped tomatoes and stir-fry until boiling.

(3) Continue to pour water olives, black olives and pepper seeds into the pot and stir-fry them to give a strong aroma.

(4) Add sugar, honey and salt into the pot and stir-fry until it becomes thick.

Cumin 25g, sugar 50g, olive oil 250g, tomato sauce 2kg, fresh tomato 5kg, bay leaf 25g, basil leaf 20g, pizza grass 50g, butter 150g, celery 75g, garlic 20g, onion 100g, black pepper 25g, salt 65438+ salt.

* production process:

(1) Cut the fresh tomatoes with a cross knife, blanch them in boiling water, peel them, cut them into pieces, put them in a blender and paste them.

(2) put fennel, laurel leaf, basil leaf and beechweed into a pulverizer and pulverize them into powder for later use.

(3) Put celery, garlic and onion into a blender and break them into pieces for later use.

(4) Pour olive oil into the pot, add butter, stir until it melts, pour celery, onion and garlic, and stir until it boils, with strong fragrance.

(5) Then pour in tomato sauce and tomato sauce, stir-fry with low fire until the pot is thick.

(6) Pour fennel, laurel powder, basil powder, pizza grass, black pepper and white sugar into the pot, and stir until the white sugar melts and the fragrance is fully stimulated. Finally, season with salt.
