First, sliced pork vermicelli soup

1, first cut the lean meat into small pieces, grab the starch, and cut the onion and coriander into powder for later use;

2. Put the oil in the pot, stir-fry the dried Chili when it is 50% hot, then stir-fry the onion, stir-fry the meat, add the salt, soy sauce and sugar, then add the boiled water and vermicelli, bring it to a boil, then turn down the fire and cook it until it is cooked. Add some chicken essence (you can add some oil to the Chili if you like spicy food, which is delicious).

Second, stir-fry shredded potatoes.

1, shred potatoes (don't cut them too finely, just like matchsticks, it doesn't matter if they are a little thick), and wash them with clear water to remove starch for later use;

2. Cut the dried pepper into sections and pat the garlic into mud;

3. Heat the oil in the pan, add the dried pepper and stir fry until fragrant, add the shredded potatoes, add a few drops of vinegar and stir fry over high fire. When the shredded potatoes become discolored (transparent), add salt and stir fry twice, then add some chicken essence and garlic and stir fry a few times, and the pan will be OK. Guaranteed crisp and refreshing.

Note: if you don't eat spicy food, you can not put spicy food or use green pepper instead (you can also fry lotus root slices, cabbage, green beans and so on. By this method).

Third, cold shredded potatoes.

Ingredients: potatoes

Ingredients: garlic, shallots, salt, soy sauce, cold vinegar (balsamic vinegar is also acceptable), sesame oil, pepper (fresh morning pepper can be used if you like spicy food) and chicken essence.

1. Chop garlic, shallots and peppers into minced meat, put them in a bowl, add salt, soy sauce, cold vinegar, sesame oil and chicken essence, and add a little cold water to mix well.

Note: You can also use this method to make dried coriander, just blanch the dried coriander with boiling water, add seasoning and use coriander powder.

Wash the cabbage, cut into pieces, pat the garlic into pieces for later use, put oil in the pot and heat it to 60% to 70%, pour in the cabbage, stir fry until it is almost cooked, add salt, add chicken essence and garlic paste before taking out the pot, stir fry twice, and take out the pot. This method can be used to stir-fry spinach, lettuce, loofah, etc. )

6. Baked tofu

Ingredients: old tofu, leek, salt, soy sauce, chicken essence.

1, cut tofu into small pieces for later use, mince shallots and put them in a bowl, add some water and salt (just smooth the water on the surface of tofu);

2. Heat the oil in the pot, and then fry the tofu in the pot. Slightly Huang Shi, add leek water, add some soy sauce, first boil it with strong fire, then turn it to medium and small torches to dry it, sprinkle some chicken essence before cooking, and stir-fry it twice.
