Steps to make steamed fish with black bean sauce
1. Wash and dry the fish (be sure to remove the black membrane in the belly), and make a few diagonal cuts on both sides of the fish

If you want the fish to taste fresh and tender, you must steam it quickly with high heat and boiling water, and make sure it is mature once. Steaming it twice will cause the fish to become old and lose its flavor. For example, for a flat fish of about 500 grams, the cooking time is generally about 10 minutes. If the time is too short, the fish will be undercooked, and if the time is too long, the meat will be rough and scummy.
