1. Remove intestines from shrimps, wash with clear water, add a little salt and pepper, marinate for 10 minute, then cook in boiling water and drain for later use.
2. Wash the celery and cut it into small pieces (if it is to coax children to eat, it must be cut into large pieces)
3. Heat the oil in the hot pot with medium heat. When the oil is heated to 40%, add cashews, slowly fry until golden brown, take out the drained oil and put it on oil-absorbing paper; (The color can be taken out after a slight change, and the color will gradually deepen after cooling. )
4. When the oil in the pot is reheated to 50% heat, saute garlic and Jiang Mo. Stir-fry celery, cooked shrimp, cooking wine, salt and chicken powder, stir-fry, stir-fry oyster sauce, and finally add cashew nuts and sesame oil to serve.

Steps/methods

Third, matters needing attention
When frying cashews, the oil temperature should not be too high. The color can be taken out after a slight change, and the color will gradually deepen after cooling.
Try to choose fresh shrimp with skin and cook it after peeling, which is much more delicious than using frozen shrimp directly.
