Composition:
Half a chicken, Chili oil 10g, salt 1 spoon, soy sauce 1 spoon, ginger 1 small piece, 5g pepper, cinnamon 1 small piece, appropriate amount of Amomum villosum, fennel, clove, Amomum tsao-ko and cooked peanuts.
The practice of braised chicken:
1. Wash the chicken, put it in a boiling water pot and take it out with clear water;
2. Boil water in a pot, pour ginger slices, fennel, Amomum villosum, pepper, Amomum tsaoko, cinnamon and clove, pour chicken into the pot, cook for 2 hours, take it out and cut it into small pieces;
3. Pour boiling water into a bowl, add cooked peanuts, Chili oil, salt, pepper oil, soy sauce and pepper powder, and mix well to form a sauce;
4. Serve the sauce and chicken together and dip it in.
Tips:
Chicken must not be cooked directly before curing. It must be scalded with boiling water first, so that the chicken will have no smell.
