In the late Ming and early Qing dynasties, Fu Shan (1607 ~ 1684), a famous Shanxi doctor, created snacks with "brain" flavor. Fu Shan is proficient in medical skills and attaches importance to dietotherapy and medicated diet. At that time, Fu Shan's old mother was weak and often fell ill. In order to give the old mother the necessary nutrition, he gave her a prescription of "Bazhen Decoction" to recuperate her body. Cook it for my mother herself. The practice of this Bazhen soup is to cut the mutton into small pieces, put it in a pot and boil it with strong fire, add spices such as pepper and astragalus, cook it with slow fire and take it out; Boil the distiller's grains juice in a pot, add cooking wine, simmer noodles and cook into batter soup; Finally, put the mutton slices, cooked yam slices and lotus root slices into a bowl, add the sheep tail oil ding, and pour in the batter soup. When eating, add pickled leeks as the base material, which tastes better. Fu Shan's old mother gradually recovered after eating Bazhen soup for a period of time. In fact, this "Bazhen Decoction" was prepared by Fu Shan according to the efficacy of medicinal materials recorded in Li Shizhen's Compendium of Materia Medica in the Ming Dynasty. According to "Compendium of Materia Medica", taking yam for a long time will make people "alert and alert, light and not hungry" and prolong life; Lotus root "can greatly stimulate appetite when cooked"; Astragalus has the effect of "invigorating qi and consolidating exterior"; Distiller's grains can "warm and digest food" and regulate viscera; Mutton has the function of tonifying deficiency and appetizing. It can be seen that this prescription can tonify qi, regulate yuan, promote blood circulation and strengthen stomach, nourish deficiency, and it is very nourishing to health if eaten regularly. The efficacy of "Bazhen Decoction" soon spread, and many people praised it.
Soon, Fu Shan taught the recipe and making method of "Bazhen Soup" to a mutton restaurant named Duo in Taiyuan to benefit the people, and named the restaurant "Qinghe Garden". Fu Shan personally inscribed a plaque and renamed "Bazhen Decoction" as "Mind". The phrase "clear food and yuan heart" contains the meaning of clear food and yuan heart. The "brain" is made of three pieces of lamb tenderloin, a fresh lotus root and a long yam in a bowl of batter soup. Sprinkle some pickled leeks when eating. The condiments of "brain" include yellow rice wine, high koji, distiller's grains and astragalus, which makes "brain" a very nutritious food. When eating, there is a smell of wine, medicine and meat, which is refreshing. The lotus root, yam, astragalus root, distiller's grains, mutton and other substances in the "brain" are all tonics, so people often eat "brain", which can replenish qi and regulate yuan, promote blood circulation and strengthen stomach, and make up deficiency.
"Mind" is generally listed during the Millennium visit to beginning of spring every year. When people eat their brains, they are accompanied by a kind of food called "hat box". "Hat box" is a kind of bread baked in the oven, which is made by kneading unfermented dough with salt and pepper into two empty shells, then putting them together and baking them in the oven. When eating, break the cake into small pieces and soak it in your brain. The entrance is salty and chewy, with a unique style.
Taiyuan Qingheyuan Hotel is a 300-year-old Muslim shop, which is famous for its "brain hole" and "miscellaneous cutting". In addition to snacks, the restaurant also deals in Muslim dishes such as instant-boiled mutton, among which the most distinctive ones are ginseng mutton, pot-collapsed mutton, steamed carp, steamed duck, Furong Yan and other famous dishes.
