Raw materials:
20g of chicken breast, 20g of pork belly, 50g of pork loin, 50g of mullet, 50g of water-soaked squid, 20g of fish belly soaked in oil, 20g of ham, 20g of coriander, 20g of onion, 20g of clean chicken nuggets, 50g of water bean skin, 50g of cabbage, 50g of green onion, 50g of bean sprouts and 20g of rice noodles.
Method:
1. Slice the meat separately, blanch it with seasoning, then rinse it and put it on a plate;
2. The rest of the materials are boiled in another pot, cooled, cut into sections and put on a plate;
3. Chop coriander and onion and eat them with oil pepper and scalded rice flour;
4. When the chicken oil is burned to 70% heat, put it in a bowl, pour in the cooked broth, and add seasoning to serve;
5. When eating, blanch the meat slices first, then blanch the vegetables slightly, then rice noodles, sprinkle with chopped green onion and coriander.
Sanxian is mainly vegetarian Sanxian and faint Sanxian.
Su Sanxian: tomatoes, bean sprouts, dried yellow flowers (all fresh, you can also add Pleurotus ostreatus to consider the cost, you can add cheap vegetables such as oily wheat vegetables). Practice casserole with seven points of water, add rice flour after boiling, and then add tomatoes and other materials to taste. It is best to add less monosodium glutamate and a little pepper.
Faint three delicacies refers to adding pork liver, ham sausage and third-line meat to the raw materials of Su Sanxian. The practice is the same as above, but first put the third-line meat and pork liver. It is better to eat some water for the third-line meat, which is tender. Considering the cost, pork belly can be replaced or not.
Method for making beef rice noodles
Ingredients: beef 1 kg, sugar color, wine 1 tablespoon, 5-6 slices of ginger, 6 slices of garlic, a few onions, 2 slices of dried Chili, 2 tablespoons of Chili sauce, 2-3 slices of pepper 1 teaspoon, star anise (I only have the broken bottom of the bottle) and 2 tablespoons of red oil.
Practice practice:
(1) Cut the beef into coarse pieces, put it in boiling water to remove the blood, and pick it up and wash it.
(2) Boil two spoonfuls of sugar and three spoonfuls of oil with low fire to make sugar-colored sauce. Add beef, stir-fry evenly over medium heat after drinking, add bean paste and stir-fry in red oil.
(3) Move the beef into a stew pot, add the broth, salt, soy sauce, ginger, garlic, dried pepper, prickly ash, star anise and onion, simmer for two hours after boiling, then add monosodium glutamate and mix well.
Add beef when the rice noodles are cooked, sprinkle with coriander, and don't put chopped green onion.
