Is there nitrite for cooking in the morning and eating at noon? I don't think so. It is nitrite, a carcinogen, but you have to keep it in the refrigerator for 24 hours to produce this nitrite. So when cooking in the morning, no nitrite can be produced at noon. Not to mention the temperature in that case, so I won't eat nitrite.
