1. First mix shredded chicken with egg white and wet starch.
2. Put oil in the wok and heat it to 30%. Put the dried bean sprouts in a wok, thicken them with half wet starch and serve.
3. Put 0.5 tbsp oil in the wok. When the oil is heated to 30%, put the shredded chicken in the oil until it is cooked, and pour it into the sieve to drain.
4. Put the pot back on the stove, put Shaoxing wine, pour the soup, sprinkle with salt and pepper, thicken with semi-wet starch, put the cooked shredded chicken into the pot, heat the oil, monosodium glutamate and sesame oil evenly, and chop it on the bean sprouts.
