1. Soak peanuts in boiling water for more than ten minutes in advance, and then control the water to dry for later use.
2. Soak the ribs in cold water for half an hour in advance, and then dry them. Pour in 1 tbsp soy sauce, yellow wine, ginger slices and half flat garlic, mix well and marinate for half an hour. If you are in a hurry, you can grab these marinades and ribs with your hands and taste them as soon as possible, which can shorten the curing time.
3. Put more peanut oil in the pot and fry the ribs while they are hot.
4. Fry until the surface is slightly yellow, and take out the dry oil for later use.
Pour out the oil fried with ribs in the pot and store it in a heat-resistant container, which can be reused in cooking in the future. Leave about 3 tablespoons of oil in the pot, then pour in the remaining minced garlic, chopped green onion, and garlic and ginger slices used for pickling ribs before, and stir-fry until fragrant.
6. Pour in the fried ribs and stir fry. Add 1 tbsp soy sauce and sugar and stir well.
7. Add a can of beer until the ribs are over.
8. Pour in peanuts, cover, bring the pot to a boil, turn off the heat and cook for about 45 minutes until the steam juice is thick. Add some salt to taste and serve.
