How to cook garlic crayfish without bitterness?

Garlic crayfish may be bitter for two reasons:

1. protein denaturation in lobster meat, ammonia gas will be produced after amino acid spoilage.

2. When frying garlic, fry it directly in the pot, which is wrong. No wonder it's neither fragrant nor bitter! If the minced garlic is directly put into the oil to start frying, it is a mistake, which will easily make the garlic black, taste bitter and lose its original spicy taste.

Prepare garlic, oil, salt, oyster sauce, sugar, chicken essence, soy sauce and chicken juice. After all the ingredients are ready, we peel the prepared garlic, then chop it, soak it in cold boiled water for a while, then take it out and drain it, and then put a proper amount of oil in the pot. When the oil temperature is 50% hot, put half of minced garlic into the oil, then fry it slowly with low fire, and turn off the heat when it is golden yellow.

Remove the oil from the fried garlic, then stir fry in the remaining garlic, pour the hot oil in the pot into a bowl, stir fry evenly, put down a little oil consumption, chicken essence, sugar and a little salt, and stir fry the soy sauce evenly, and the garlic is ready. When frying garlic, don't fry garlic directly in the pot. Soak it for 10 minutes first, because garlic contains thiamine, which will make garlic bitter when it encounters high temperature.

How to choose fresh lobster?

First of all, you must choose live and fresh crayfish when buying. Dead crayfish must not be eaten, because after the lobster dies, a large number of bacteria in the body decompose immediately, which is easy to cause food poisoning. Fresh crayfish are bright and full in color, and the meat is firm and elastic. If it is a crayfish that has been left for a while or has died, the meat is fresh and tender, and it looks empty and not full.

In addition, don't eat green "lobster liver" and crayfish head, because these organs (liver) and head store toxins, which may cause food poisoning after eating. At the same time, you can't eat too many crayfish at a time to avoid indigestion affecting your health.
