Fermented dough
1. Soak the dry yeast in warm water for 3-5 minutes. The amount of yeast can be the amount of salt you put in each cooking.
2. Take about half a catty of dried noodles, add a little salt and sugar, and mix evenly.
3. Pour in yeast water and stir the dough.
You just need to pay attention to the water consumption of dough. When you feel the dough soft, you can start to feel fat. I usually mix noodles at night, put them in a pot and bake them all night. Just look at the head of the face, which is twice as long as it used to be, and there are many honeycomb eyes on the surface.
Kneading: Knead the dough for about 200 times in order to squeeze out the bubbles in the dough, and the dough will be smoother and more uniform.
Noodles: Divide the kneaded dough into small dough you want, and then knead it in order to make a round cake. Be careful not to thin it. Cover with a wet drawer cloth and simmer for 20 minutes. If you like sweet, put some sugar in the dough, wrap it up and stick it into a cake, which will taste better.
Making:
1. Burn it with an electric baking pan until it is steaming, and wait for another half minute. Open the lid, turn it over and brand it.
2. Wait for half a minute after steaming, and both sides will be burnt into light yellow.

The scalded noodles are soft and nutritious.
Materials:
500 grams of flour, 2 eggs, onions, carrots, salt and oil.
Exercise:
1, slowly add boiling water to flour and mix well. Add eggs, chopped green onion, diced carrots, salt, etc. when it is not hot.
2. Knead the dough into smooth dough 10 minute.
3. Divide the dough into dough of equal size and roll it into thin skin.
When the pan is hot, coat it with a thin layer of oil and spread it in the bread.

Brief introduction of spectrum
The only difference between the pastry with crispy shallot and the pastry I used to make is that the pastry is used instead of oil. Different from the whole wheat shortbread made some time ago, it uses rough flour instead of scalded flour. Crispy pastry is fried in hot oil, has a special flavor, is healthier than lard, and is also a vegetarian. Besides leek, it can also be made sweet. Spread out the dough and sprinkle some sugar on it.
Materials:
1 cup of white flour 1.5 cup, 2 tsps of sugar, 5 tsps of dry yeast 1.5 cup of warm water, appropriate amount of chopped green onion, appropriate amount of salt, 2 tsps of flour 1 tsp of oil.
Exercise:
1. Method of ghee: put oil in the pot, heat it on medium fire, add flour when the oil is 50% to 60% hot, stir with chopsticks or wooden spoon, and mix the flour and oil evenly. Or not too big. Then turn off the fire and let it cool for later use.
2. Making method of flour cake: mix the dough (mix water with dry yeast, wait for 2 minutes and then pour it into a container filled with flour) and make it for one and a half hours or until the flour swells to twice the size. Knead it again and continue to send it for 30 minutes;
3. Roll the dough into a square piece with a thickness of about half a centimeter, spread the pastry on it (pastry is not like oil, it can be spread evenly, so just spread some evenly on the dough), and finally sprinkle with chopped green onion;
4. Fold 30% horizontally, roll it flat, then fold 30% horizontally from the short side, roll it flat, and you can repeat it. If it is not easy to operate, you can stop here and cut it into 3-4 sections.
5. Heat some oil in the pot. When the pot is 80% hot, put it in the bread and heat it. After expansion, turn it over and continue heating for 2 minutes. Then pour some boiling water on the pot, cover it, simmer for 5-8 minutes, turn the cake over and bake for 2-3 minutes. However, the temperature still depends on the firepower and the thickness of the cake.

If you don't need frying, you can steam it in a pan. After the pot is boiled, steam it for 18-20 minutes, which should be enough. Turn off the fire and wait for 2-3 minutes before lifting the lid.
