Step 1: Prepare.
The materials needed to make the lotus root box are: lotus root, pork belly, Jiang Mo, chopped green onion, eggs, flour, salt, chicken essence, soy sauce, oil and spiced powder.
Lotus root should be tender, peeled and cut into 0.5-0.8 pieces after washing.
The correct tutorial is to cut a piece with a thickness of 1 cm first, and then cut a knife in the middle, but don't cut it off.
Wash pork belly and chop it into minced meat. Don't choose too fat pork belly. If you don't like fat meat, you can use whole lean meat.
Adjust the bottom flavor of the cut meat, add appropriate amount of salt, a small amount of chicken essence, 1 tablespoon soy sauce, 2 tablespoons peanut oil, 1 tablespoon starch, and then stir well.
Then pour in chopped green onion and Jiang Mo, stir well, and the meat stuffing is ready.
Step 2: Make a lotus root box.
Spread the prepared meat on the lotus root slices and decide how much meat to put.
Then cover it with another piece and press it gently.
Why should I cut off the lotus root? Because if you don't cut it off, it's easy to break it off when filling meat, unless there is less meat inside. For people who don't like meat, this is definitely not good, so since it's going to be broken, I might as well cut it off early and operate it later. If there is too much meat in the back, fill all the holes in the lotus root.
Step 3: Stir the batter.
Beat an egg into flour, add a little salt and a little spiced powder. If you don't like the spiced powder, don't add it, and then stir well.
Add a small amount of water, be careful not to add too much, and then slowly stir it into a batter. The prepared batter should be hung on the lotus root, not too thin. If it's too thin, it won't hang. If it is too thin, add flour.
