Preparation materials:
Portions, garlic, ginger, salt, cooking wine and a little vinegar
1. Wash the swimming crabs and peel the potatoes.
2. Open the swimming crab shell and (keep it intact) remove the gills and back navel. The crab body is divided into two parts and the front part of the crab claws is removed.
3. Slice potatoes and filter excess starch with clean water.
4. Heat oil and stir-fry garlic and ginger.
5. Add swimming crab pieces, cover the pot and simmer for three minutes.
6. Pour in boiling water and add potato slices. Add a spoonful of cooking wine and half a spoonful of vinegar and simmer.
7. After 10 minutes, add appropriate amount of salt, scoop it out, and serve at the table.
