How to choose scallops

Scallops may not be much different, but some places will sell a kind of "king scallop", which is more expensive than ordinary scallops, and the meat is much fatter and tastes better. Scallops must be selected on the spot, and it is better to find a little cleaning, which will be more convenient in the subsequent treatment.
Buy live scallops
First of all, you should choose a scallop with uniform color and uniform size. You can't choose too small. Otherwise, it will be worthless because there is no meat. Then if the shell is opened, the live scallops will be closed by external force. After opening, scallops cannot be closed and used.
Selection of frozen scallops
When buying frozen scallops, you must first look at the appearance. Then, after they are thawed, the output of pure scallop meat is. The size and uniformity of particles, as well as more or less crushing, can decide whether to use them. The total yield is about 70%, and the color is white. Big and full, very fresh. Frozen scallops with no particles or no more than 10 particles per 500g are qualified products.

Sauté ed scallops
Ingredients: 2/3 onions, 2 green peppers, 6-8 garlic, scallops 10 or so, 2 pieces of ginger, proper amount of cooking wine, a little salt and sugar, and proper amount of light soy sauce.
Cut two slices of ginger and mince garlic.
Onion, green pepper, cut into pieces
Saute ginger and minced garlic in a hot oil pan.
Put green peppers and onions in incense.
Add scallops, add some wine, salt and sugar and stir-fry for half a minute.
Roasted scallops with cheese and garlic
Ingredients: 20g cheese, 6 scallops (medium size), garlic 15g, butter 10g, proper amount of salt, 2 tsps white pepper1/and 2 tsps brandy (or white wine).
The scallop is broken with a knife, cut along the scallop column (the center of the round white meat) and one side of the scallop shell with a knife, take out the shell, take out the scallop viscera, wash it with clear water, and dry it for later use. (You can also buy scallop friends to do this step. )
Marinate scallops 10 minutes with a little salt, pepper and brandy.
Press garlic into mashed garlic with minced garlic, and then put it in the microwave oven with butter for about one and a half minutes to let the butter melt and the garlic pop.
Season garlic and butter with salt and pepper, and sprinkle butter and garlic juice evenly on scallops.
Cut the cheese into filaments and spread it evenly on scallops (the amount of cheese depends on your preference)
Preheat the oven to 220 degrees, add scallops and bake for about 13 minutes until the cheese changes color.

1. If you don't have brandy, you can use white wine instead. Cooking wine is not recommended.
2. The shell itself is delicious, so it is best not to put monosodium glutamate in cooking, so as not to destroy the natural taste and not to add salt.
