Specific steps
first step
1. Preserved eggs, eggs wrapped in gray, salted eggs, 3 eggs, purple yam and green beans with red pepper (optional).

2. Preserved eggs, gray-wrapped eggs and salted egg yolk are diced for use.

3. Separate the egg white from the yolk. Prepare a container for steaming eggs, wrap it in tin foil and brush it with oil. Add salt and ginger juice into egg yolk and egg white twice and stir well.

4. The red pepper in Zihuaishan is cut into small pieces, and the mung bean is placed at the bottom of the steaming plate.

5. Add whole egg liquid to steam vegetables.

Cooking tips
Preserved eggs should be detoxified with Jiang Mo and vinegar. Preserved eggs are best eaten after being cooked, not stored in the refrigerator.
