Purple eggplant 1
Tofu 1 block

Practice of eggplant tofu pot
Except the tender tofu in the box, any other cube tofu will do. I use frozen tofu, cut into pieces, blanched and refrigerated for later use. Other tofu need not be blanched.
Frozen tofu has been processed and put in a pot. You can make it in a casserole. I used two eggplants because of the large quantity, and directly used a flat-bottomed non-stick pan. Other tofu, just cut into large pieces and put them in the pot. There is no need to put oil in the pot!
Flammulina velutipes cut off the roots and put them on tofu.
Use this purple eggplant, cut it into slender strips, sprinkle with salt and catch it.
Soak in water to prevent oxidation, and you can see that the water is discolored.
Take out the eggplant, take it out and drain it, and change the water twice until the water becomes clear.
Take out and grab the water for later use. The eggplant treated in this way eats less oil and is healthier and more delicious!
Prepare garlic
Put a little oil in another pot, stir-fry the eggplant until it becomes soft, and spread it on the Flammulina velutipes just now. Dear friends, ignore the oxidation color of this eggplant. Something happened in the middle of the operation, and the eggplant changed color. Eggplant will not change color if it is not delayed.
Put a little oil in the pot, add garlic, stir-fry over low heat, and stir-fry minced meat. I use chicken leg meat, that is, I buy chicken legs to be boned and diced. The meat is discolored. Add some pepper and continue to stir fry. God beast should not eat too spicy. I use chopped pepper, not much. Parents put it according to their own tastes.
Stir-fry the fragrance, use oil, light soy sauce, stir fry a few times, put a small bowl of water, put a proper amount of salt according to your taste, and throw away the sugar.
Pour the soup into a casserole (mine is a pan)
Cook slowly for about 8 to 10 minutes, sprinkle with chopped green onion and mix well to start!
