How to make Braised Shrimp with Old Cucumber?
1. Cut off the legs of the prawns, remove the intestines, wash and drain
< p>2. Peel the old cucumber, cut it in half, remove the seeds and capsules, and cut into thick slices of about one centimeter. (It can’t be too thin, which will affect the taste)
3. Cut the green onion into sections and shred the ginger.
4. Heat the oil in the pan, heat the pan and cool the oil. Add onion and ginger to the pot
5. Pour in the shrimp and stir-fry until it changes color
6. Add the old cucumber and stir-fry< /p>
7. Stir-fry the old cucumber until it is slightly soft, add cooking wine, dark soy sauce, and light soy sauce, stir-fry evenly, cover and simmer
< /p>
8. Note: Do not add water. Old cucumbers will become watery when exposed to salt, so adding more water will be too much! Be careful to stir-fry during the simmering process to avoid burning the pot. When you feel that the water has come out of the old cucumber, add sugar, stir evenly, continue to simmer with the lid on, and stir-fry carefully to make the old cucumber color evenly.
During the braised process, the color of the old cucumber will become darker and softer. When it is almost done, open the lid to collect the juice. When the juice is rich, you can put it on a plate, sprinkle with a handful of chopped green onions, and eat happily!
