Ingredients: 900g trotters, 300g dried soybeans, 40g vegetable oil, crystal sugar 1 0g, 3g star anise, 8g cinnamon, 2g fragrant leaves, 0g pepper, 0g soy sauce15g salt1each.
Steps:
Chop 65438+900g trotters, wash them, soak them in clean water15min to remove blood.
2. Pour 40g vegetable oil into the pot, heat it and stir-fry the trotters.
3. Stir-fry over medium heat for about ten minutes. When the trotters are fried until the skin feels a little burnt, add 10g rock sugar, 8g cinnamon bark, 3g star anise, 2g fragrant leaves and 0.6g pepper, and continue frying.
4. Immediately pour 1000ml boiling water into the pot.
5. Continue to add 10g salt, 15g soy sauce, 6g vinegar and 300g washed and soaked soybeans into the pot.
6. Pour all the materials in the pot into the electric pressure cooker, cut 25g ginger slices and a dried pepper (weighing about 0.8g), cover the pressure cooker and press for 25min.
7. After pressing, pour all the ingredients back into the pot and boil the soup dry. In the process of cooking, you can use chopsticks to clip out all the fragrant leaves, star anise, cinnamon and pepper.
8. The soup is almost dry. Add 3g Taitai Le Broth Essence to refresh yourself, stir well and turn off the heat.
9. Wrap the stewed soybeans in trotters and sprinkle with 2g chopped green onion.
