Preparation materials of shrimp and egg soup (two persons): egg 1 person, one cup of chicken soup, one crab fillet, two prawns, two fresh mushrooms (it is better to carve a knife on the mushroom cover with a knife), a small piece of cooked chicken breast, and cut it into small pieces (if raw chicken is used, cut it into small pieces, and then adjust it slightly with cooking wine and soy sauce). If one egg is not enough for two people, you can use two eggs and two cups of chicken soup.
Put chicken, crab roe, shrimps and mushrooms into two small bowls respectively. After the eggs are broken up, add the chicken soup and mix well-because the chicken soup itself is salty, there is no need to add soy sauce or salt to taste. Use a strainer to filter out the floating foam in the prepared egg liquid, so that it is not easy to "honeycomb" when steaming.
Carefully pour the unfoamed egg mixture into a small bowl.
Add water to the steamer, fire. After the water is steamed, put the small bowl on the drawer and steam it for 1-2 minutes, then turn to low heat and continue steaming for 10- 15 minutes, or insert it with a toothpick until the egg liquid inside is cooked.
Matters needing attention
1) When the egg mixture and chicken soup are mixed evenly, I feel that the chopstick head has been "touching" the bottom of the bowl and is not easy to foam.
2) Always pay attention to the heat and time, because the heat is too big or too long, it is easy to "honeycomb".
