The first is turtle soup.
Ingredients: Smilax glabra 15g, soft-shelled turtle 1, jujube 10g, 50g lean meat, and ginger 10g.
Seasoning: clear soup, 4g salt, 3g Shaoxing wine and a little pepper.
Exercise:
1. Slice Smilax glabra, wash tortoise, cut into large pieces, cut lean meat into pieces, peel ginger and slice.
2. Boil the water in the pot. After the water boils, add turtle meat and lean meat, cook for 5 minutes on medium heat until the blood disappears, remove and rinse.
3. Put Smilax glabra, tortoise, red dates, lean meat and ginger into a casserole, add clear soup, Shaoxing wine and pepper, cover and stew for 3 hours.
4. Season with salt and stew for another 20 minutes.
Second, turtle mutton soup
Ingredients: 500g of clean mutton, 500g of clean nail fish, 1 medicine bag (codonopsis pilosula10g, angelica sinensis and aconite root 5g each),10g of medlar, 20g of ginger slices,15g of onion and rock sugar, 50g of Shaoxing wine and 4g of refined salt.
Exercise:
1, put the nail fish into the boiling water pot and take it out, tear off the black film on the surface and wash it. Then put the mutton and nail fish together in the pot, cook them, take them out and wash them, and cut them into pieces about 2.5 cm square.
2. Heat the lard in the pot, stir-fry the mutton and nail fish until the water is dry. Boil Shao wine and stir fry.
3. Add water to the casserole, put it in a medicine bag and cook for about 10 minute. Add mutton, anchovy, onion, ginger and crystal sugar and cook until cooked. Remove onion and ginger, add Lycium barbarum, refined salt, monosodium glutamate and pepper and boil.
