Every country has a unique food culture. Germans do everything very seriously, and cooking is the same. Therefore, when Germans cook, they usually prepare a small kitchen scale. Seasonings and side dishes are weighed by these scales, while we in China basically don't need scales for cooking. So when we look at the menu, we will basically see an appropriate quantity, a little bit, a pinch of such units of measurement.
So in our country, everyone's cooking has a unique taste, which is also difficult for others to imitate. Because China's food culture is very extensive and profound, and there are many kinds of dishes, it would be too much trouble if China chefs use scales when cooking like Germans. Because Chinese cooking is more troublesome, and a lot of side dishes and seasonings are needed, if each seasoning is weighed before cooking, it is likely to lead to paste.
And if you really want to use a scale, it is a waste of time. You may get up in the morning and start preparing for cooking. Moreover, even if the grams of these seasonings and side dishes are accurate, the heat is different. If there is no way to master the heat, the cooked food is not delicious. If everyone cooks the same food, there will be no business in so many restaurants.
