The authentic method of braised pork is as follows:
Tools/materials: pork belly, green vegetables, onions, ginger, garlic, bay leaves, cinnamon, star anise, oil, sugar, light soy sauce, cooking wine , salt, chicken essence.
1. Wash the pork belly and cut into small pieces, put it into a pot and blanch it.
2. Boil for 2-3 minutes, skim off the foam, remove and set aside.
3. Put a small amount of oil in the pot, add the cooked pork belly, stir-fry until golden brown, remove and set aside.
4. Turn to low heat, stir-fry the pork belly with oil, add a spoonful of sugar, and stir-fry until the sugar color turns out.
5. Add pork belly and continue stir-frying.
6. Add a bowl of water to fully cover the pork belly. Add ginger, onions, garlic, star anise, bay leaves, cinnamon, light soy sauce, salt, chicken essence, and cooking wine, simmer for 25-30 minutes, and reduce the juice over high heat.
7. Prepare another pot, boil water, add a little salt, blanch the green vegetables in the water, and place the blanched green vegetables on a plate.
8. Take out the braised pork and place on the plate.
