So beef snacks can be regarded as the most common kind of fast food in southern Fujian.
Legend about beef soup:
It is said that in the third year of Jingyan in the Southern Song Dynasty (1278), Quanzhou Shipping Company promoted Pu Shougeng to the Yuan Dynasty and pursued Wen Tianxiang and others together with the Yuan soldiers. In April, after the death of Song Dynasty, Lu Xiufu and others made Zhao Weidi, who was only eight years old. In order to escape the pursuit of Yuan soldiers, they sometimes live on the boat and sometimes go ashore for food, which is very embarrassing. One day, Lu Xiufu led the little emperor into Fashi Mountain to beg. Only one family lives in the wilderness, and only father and daughter live alone in this family. The only old plowman in the family was slaughtered by Yuan Bing a few days ago. At this time, there was only one cowhide and four hooves left at home. Helpless, Lu Xiufu's father and daughter scraped off the meat scraps left on the cowhide bit by bit with a knife, cooked the scraped beef in boiling soup, and conveniently added some sea salt and Jiang Mo. Unexpectedly, the little emperor had a hearty meal with this delicious cooking.
In the second year of Xiangxing in the Southern Song Dynasty (1279), the Song and Yuan armies fought a decisive battle and Song Jun was defeated. Lu Xiufu threw himself into the sea behind his back, and the Southern Song Dynasty perished. The beef soup made by Lu Xiufu and the farmer's father and daughter, improved by the farmer's father and daughter, has been circulated in southern Fujian so far. In the Ming Dynasty, with the introduction of sweet potato from Luzon to Fujian, sweet potato powder replaced mung bean powder as the main raw material for making beef soup, and the practice and story of beef soup have been passed down to this day.
