Recipe practice:
1. Cut the fillets, scrape out the minced fish, and scrape the minced fish clean.
2. Chop pork belly into minced meat, separate egg white and yolk, and cut onion into chopped green onion.
3. The ratio of minced fish to minced meat and starch is 7:3:2, with 2 egg whites. Add appropriate amount of salt, 2 teaspoons of water and chopped green onion, and stir clockwise until the minced fish stands upright and does not deform.
4. Take the lunch box (or bowl), spread the plastic wrap, break the yolk, spread a layer on the bottom of the box, put the chopped fish into the lunch box, smooth the surface, and gently shake the lunch box to shake out the bubbles.
5. Steam in an electric steamer for 15 minutes, take out, spread out and slice.
