1. It takes about an hour to soak the dried moss in cold water. If time is tight, you can also soak in warm water for half an hour, but the taste is not as crisp as cold water.
2. Cut the soaked moss into small pieces, blanch with boiling water, remove and drain.
3. Add white vinegar, salt, sugar, sesame oil, soy sauce and chicken essence and mix well.
