1. Peel the old terrier of Chinese cabbage, cut off the head and roots, clean the rest and cut it into 5 mm wide strips, and then cut it into 5 cm long strips horizontally. Put it in the pot, mix in the salt for about half an hour, and dry it by hand.
2. Add sugar, white vinegar and a little water to the spoon and boil it into sweet and sour juice. Take out the ladle, air-cool, pour it evenly on the cabbage strips, cover it tightly and stew for about 1 day. When eating, put it on a small plate and accompany it at will.
