Raw materials: Wuchang fish, garlic, green onions, ginger powder, oyster sauce, soy sauce, cooking wine, cooking oil and rock sugar;
Recipe making process:
1. Clean Wuchang fish, remove internal organs, scales and gills, clean it, use kitchen paper to absorb water from the fish, peel garlic and cut onion into small pieces. Fish must be washed without blood;
2. Heat the wok, put a little cooking oil, cut both sides of Wuchang fish with oblique knives, enlarge the wok, and fry both sides with oil;
3. Stir-fry garlic and onion with the remaining oil at the bottom of the pot;
