Pour cold water into the lamb chops, add cooking wine and pepper (to remove the fishy smell), and cook together. After boiling, skim off the floating foam. After the mutton turns white, take it out and rinse it with warm water.
The seasoning is very simple. Onion and ginger are indispensable. It is said that lemon (orange peel can also be used) can be used to remove the fishy smell, and a little star anise and fragrant leaves can be added (or not, otherwise the flavor of spices will rob the freshness of mutton and weaken it).
Put the blanched mutton in a pressure cooker, add seasoning and stew for one hour. You can add salt to stew 10 minutes after taking out the pot.
