Recipe practice:
1. Wash trotters and cut into pieces.
2. Boil water in the pot, add ginger slices, rice wine and pig's trotters.
3. Connect cold water and soak for ten minutes.
4. Stir-fry shallots, ginger, garlic, fragrant leaves, star anise and dried red peppers in a hot pot.
5. Put the pig's trotters in a pressure cooker and cook for 20 minutes, then take them out and put them into the pot and stir fry.
