First, the production of sour soup
There are two kinds of sour soup in Guizhou, one is red acid, the other is white acid, and the fish in sour soup uses red acid.
Preparation materials: jar, red pestle 4000g, ginger 400g, garlic 200g, red pepper1000g, glutinous rice flour 90g and rice wine 200g; 450 grams salt

Seal and let it ferment naturally 15-20 days.

Second, hot pot making
Ingredients: A fresh catfish with a beard.
Seasoning: red sour soup, broth, soybean sprouts, ginger, onion, pepper, cooking wine, sugar, mountain pepper oil, lard and vegetable oil;
Seasonings dipped in water: Chili powder, pepper powder, fermented bean curd, mustard tuber, salt, monosodium glutamate, sesame oil, coriander segments and chopped green onion.
Preparatory work:
Kill the fish clean, change the knife, cut from the back to the abdomen, don't cut the abdomen, cut about 2 cm each;

Take a pot, heat it, add lard and vegetable oil, then add ginger slices, and garlic will be fragrant;
Add red sour soup, then add appropriate amount of broth to boil;

Blanch soybean sprouts until they are broken, then take them out and put them in a hot pot basin.
Put the fish in a pot, turn to medium heat, cook it, take it out and put it in a hot pot;
Add a little pepper oil to the pot, pour it into the hot pot basin with the soup, and serve with a little embellishment.
Sour soup fish hotpot
Add a little pepper powder, pepper powder, fermented bean curd, pickled mustard tuber, salt, monosodium glutamate, sesame oil, coriander segments and chopped green onion to the soup. Eat the same way as Chongqing hotpot.
