There are many bamboo mountains in Bamin mountain area, but Zhangping bamboo shoots have a long history and are well-known at home and abroad, and are deeply loved by people in Shanghai, Tianjin and Guangzhou and compatriots in Hong Kong and Macao. Many famous dishes, such as "Stewed Three Silk" and "Royal Donkey Meat", are indispensable to dried bamboo shoots in Fujian.

Du Fu, a great poet in the Tang Dynasty, praised bamboo shoots in a poem: winter bamboo shoots smell far away, and colorful clothes are more spring. In recipes all over China, dried bamboo shoots are regarded as excellent seasonings, such as the smooth tenderloin in Beijing cuisine, which is fresh, tender and delicious; Shanghai famous dish with three threads, clear soup and delicious entrance; Chaozhou famous dish clear soup crisp cotton stewed Yuzhu chicken; Jade chicken, a famous dish in Fuzhou, has good color, smell and taste. Zhangping's famous dish, mushroom and pork leg bamboo shoots, is tender and delicious, oily but not greasy.
