Fried lotus seeds with yellow sand
Ingredients
3 raw salted egg yolks, 80 grams of lotus seeds, 70 grams of minced pork, 20 grams of green onions, 10 grams of minced garlic , 1/4 tsp salt, 1/2 tsp MSG, 1/4 tsp fine sugar, 50㏄ water
Method
1. Put the lotus seeds in the steamer and steam for about 40 minutes. When the lotus seeds become soft, remove and let cool and set aside; steam the raw salted egg yolk for about 4 minutes until cooked, remove and grind into a puree and set aside.
2. Heat the pan, add 1 tablespoon of salad oil, sauté the minced garlic over low heat, add the minced pork and stir-fry until the minced pork spreads and the surface turns white, then add the lotus seeds from step 1 , salted egg yolk puree, chopped green onion and all seasonings, stir-fry over low heat until the soup dries up.
Lotus seed barbecued pork cakes
Ingredients: 200g dried lotus seeds, 1 tablespoon sugared osmanthus (15ml), 200g barbecued pork meat
Method
Dried Remove the lotus seed core from the lotus seeds. Cut the barbecued pork into 2cm square cubes.
Clean the cored lotus seeds, put them into a pot, add enough water, bring to a boil over high heat, then turn to medium heat and continue to cook for 30 minutes until the lotus seeds are cooked and soft.
Take out the cooked lotus seeds, drain off the water, leave to cool, then pound into a fine paste, add sugared osmanthus, and mix evenly to form lotus seed puree.
Take an appropriate amount of lotus seed paste and press it into a small cake, put the diced barbecued pork in the middle, then wrap the whole diced barbecued pork with the lotus paste cake and roll it into a ball. Put the lotus paste dough wrapped with diced barbecued pork into the mold, compact it and then flip it out.
Walnut snack
This snack is made by adding sweet red bean filling inside the round dough, and then adding walnut pieces on the outside of the snack.
