It takes about 2 days to soak in clear water, during which water needs to be changed 3 to 4 times. When changing water, you need to rub snails with your hands to remove dirt on the surface.
After soaking snails, you need to cut off the snail's ass. Removing the ass means removing the internal organs that snails can't eat and removing the parasites at the bottom. Of course, this cannot be thoroughly cleaned, and it can only be reduced. And most importantly, you can't make snails without removing your ass, because you have to suck them with your mouth. You can't do it without opening the two ends of the snail.
After cutting the bottom of the snail, soak it in clear water, put some salt in it for about 2 hours, then rub it clean by hand and put it on a plate for later use.
Put the oil in a pot and cook it until it is half cooked. Stir-fry star anise, cinnamon, garlic and pepper until fragrant. Stir-fried snails change color. Then add the broth and simmer over high fire. The soup here cannot be boiled dry. If it's dry, it doesn't taste good. If cooked for a long time, it will kill parasites. Then add perilla and scallion and stir fry.
There are several points to note: 1. Soak in clear water for more than 2 days, otherwise the sediment will not be spit out cleanly. 2. The butt must be cut off. Don't drink all the soup. Without soup, it doesn't taste right and won't be wordy.
