Tomato and beef noodles
1. Put a little vegetable oil in the pot, first add the onion shreds and stir-fry until fragrant, then add Tomato chunks, stir-fry evenly over high heat.
2. Stir-fry the tomatoes until the juice is released, then add an appropriate amount of water to the pot.
3. Boil the water over high heat. Do not wait until the water in the pot boils. When bubbles appear slightly around the pot, you can knock the eggs into the pot.
4. Cook over medium heat until the eggs are slightly solidified, then put the noodles into the pot.
5. Add an appropriate amount of salt according to personal taste, and add a little light soy sauce to enhance the flavor.

Zhajiang Noodles
1. Prepare all the main ingredients. The ingredients used here include pork, ginger, green onions, soybean paste, sweet noodle sauce, and light soy sauce. Cut the pork into small cubes and place the fat and lean meat separately. For pork, it is best to choose front leg meat that is fat and lean. The meat of the front leg is tender and is best eaten in stir-fry.
2. Put an appropriate amount of peanut oil in the pot, first put the diced fat meat into the pot, stir-fry over medium-low heat to get out the fat. Add the diced lean meat and stir-fry over medium heat until the lean meat becomes crispy. Add the green onion and minced ginger and stir-fry until the aroma becomes fragrant.
3. Put a spoonful of soybean paste and a spoonful of sweet noodle sauce into the pot, stir-fry the sauce over low heat, and stir-fry constantly to avoid burning the pot. Stir-frying the sauce is the key. Only when the sauce is stir-fried can the noodles taste fragrant enough. The whole process of stir-frying the sauce needs to be on low heat because the sauce is very easy to burn in the pot.
4. Add a small spoonful of light soy sauce, stir-fry over low heat until evenly mixed, add two tablespoons of water, and simmer over low heat until the soup thickens. Since both soybean paste and sweet noodle paste have a salty taste, there is no need to add additional salt.
5. Put an appropriate amount of water in the pot and boil it. After the water boils, roll out the noodles and cook them. Put the cooked noodles into pure water and let them cool down.
6. Grate the cucumber into thin strips and put it into a bowl. Add an appropriate amount of noodles on top, pour in the freshly fried noodle sauce, stir well and then eat.
