In ancient times, summer was called "Zhu Ming", which means sunny and red. In the past, there was a saying in Nanjing that "there are twelve red flowers in Duanyang". In this festival, red flowers, fruits and dishes are taken as objects for people to appreciate and taste, so as to set off the festive atmosphere in Duanyang and show its characteristics. "Duanyang Twelve Red" is realgar wine, yellow croaker, salted duck eggs, ham, fried shrimp, roast duck, amaranth, rose sand (sugar), rose, pomegranate flower, cherry and loquat.

Insects are most active in summer. In Duanyang, people carry out exorcism and disinfection activities, such as smoking with wormwood leaves and splashing with realgar water, to eliminate so-called "five poisons" pests such as centipedes, scorpions and spiders. Chen's "Local Records of Jinling Products" said: "The five poisonous dishes in Duanyang: leek, leek, lobster sauce, whitebait and shrimp." Eating this dish symbolically eliminated pests and reflected people's simple awareness of environmental protection at that time.
