"Nine Bowls" is the general name of Sichuan traditional dishes, which originated from the banquet culture in rural areas. It refers to nine kinds of dishes served continuously at large banquets, mainly steamed vegetables, including the following: soft fried steamed meat, steamed ribs, steamed beef with flour, steamed turtle, steamed mud chicken (or steamed whole chicken), steamed mud duck (or steamed whole duck), steamed elbow, sand meat and bacon.
