Xiba tofu

Minjiang fish

The Minjiang River, Qingyi River and Dadu River outside Leshan City are famous for their rich fresh fish since ancient times because of their fine sand and little pollution. Among them, Jiangtuan (scientific name Haliotis diversicolor) is the best fish in Danshui River. Jiang Tuan has no scales, few spines, round body and tender and plump meat, which is most suitable for steaming. Jiangtuan is often chosen as a dish for state banquets.
