Exercise:
Step 1: Peel potatoes, wash them, cut them into pieces, and soak them in clear water; Slice ginger and shred onion.
Step 2: Wash the beef, cut it into blocks against the grain, blanch it in boiling water, remove blood and odor, and drain it for later use.
Step 3: Heat 3 tbsps of oil in the pan, saute ginger slices and shallots, add beef pieces and stir-fry a few times, add 3 tbsps of soy sauce king and cooking wine 1 tbsps, and stir-fry over high fire for 2 minutes.
Step 4: Pour 2 bowls of water into the pot, add star anise, cinnamon and fragrant leaves, cover the pot with high fire and cook for 50 minutes on low heat. Then pour in potato pieces, stir well with beef, cover with low heat and stew for 25 minutes.
Step 5: Open the fire and collect the juice. When the soup in the pot is thick, add a tablespoon of salt and a little sugar to taste, sprinkle with some chopped green onion and serve.
