Ingredients:
Perch 1 piece, ginger 1 piece, 2 millet peppers, half a green onion, steamed fish and soy sauce, and cooking wine.
Steps:
1. Wash the perch, make 3 cuts on both sides of the body, and cut it from the bone side along the belly;
2. Slice ginger 1 block, 2 pieces of millet pepper, half of scallion, and parsley 1 root;
3. Spread shredded onion and ginger evenly on the plate, add perch and pour cooking wine on it, and put shredded onion and ginger on the fish, steam it in the pot for 8 minutes and take it out;
4. Pour out the soup in the dish, remove the shredded onion and ginger from the fish, pour in steamed fish soy sauce 1 spoon, add shredded onion and ginger and shredded millet pepper;
5. Put a small amount of oil into the pot, heat the oil to 70%, and pour the hot oil on the fish.
