How to soak sea cucumbers
Step one: Put the dried sea cucumbers you bought into a water-free and oil-free basin, add an appropriate amount of purified water, and gently Scrub the sea cucumber thoroughly to remove any floating dust on the surface of the sea cucumber.
Step 2: Place the sea cucumber in the basin, add an appropriate amount of pure water, the water should cover the sea cucumber by 10 cm, then place the basin in the fresh-keeping layer of the refrigerator (the refrigerator temperature is set at 3-5 degrees optimal). The first soaking takes 2 days and 2 nights, during which the water needs to be changed 4 times, every 8-12 hours. Note: During the soaking period, there should not be any impurities in the water.
Step 3: After 2 days and 2 nights of soaking, the sea cucumber will swell to 2.5-3 times the size of the original dried sea cucumber. Next, let’s deal with the sea cucumber again. Cut upwards and downwards along the small opening on the belly of the sea cucumber. At one end of the sea cucumber, there is a protruding part with a white inside. This is the sand spit of the sea cucumber. You need to remove the sand spit and wash the sea cucumber with pure water.
Step 4: After cutting the sea cucumber, you can see that there are white tendons in the belly of the sea cucumber. It should be noted that these white tendons also have high nutritional value. Do not pick them off and throw them away. You need to use scissors to cut the white tendon into 3 sections, which will help the sea cucumber soak.
Step 5: Take a large pot that is water-free and oil-free and has better heat preservation. Put the sea cucumber into the pot, then add enough pure water to cover the sea cucumber by 10 cm, and cover it. Cover the pot, bring to a boil over high heat, then reduce to medium to low heat and simmer for 30-40 minutes until the sea cucumbers are cooked. (Use chopsticks to hold the sea cucumber in the middle. If the two ends of the sea cucumber hang down naturally, it proves that the sea cucumber is cooked.) After the sea cucumber is cooked, do not rush to take it out. Let it simmer in the pot and let it cool naturally.
Step 6: Put the cooled sea cucumbers into a basin, add enough pure water, and continue soaking for 2 days and 2 nights. During this period, change the water 4 times, every 8-12 times. Change the water every hour. (You can freeze some ice cubes in the refrigerator, and add an appropriate amount of ice cubes every time you change the water. The low temperature will help the sea cucumber soak)
Step 7: After 4 days and 4 nights of low-temperature soaking After changing the purified water 8 times in one day, the sea cucumber has been soaked to three times its original size. Finally, wrap the soaked sea cucumbers individually in plastic wrap or sea cucumber bags and store them in the refrigerator.
