Orange mousse

Ingredients for orange mousse

The method of orange mousse

Step 1

First of all, Qifeng cake embryo needs to be baked: the formula is 3 eggs, 20g egg yolk white sugar, 30g protein white sugar, 20g soybean oil, 28g milk and 50g low flour, which are placed on a "baking tray" and baked in an oven 150℃ for 40 minutes. Let it cool for about 2 hours. Pay attention to "no oil paper and butter" at the bottom and around, so that the baked cake can be fluffy.

Second step

Slice oranges, pick about 7 slices of oranges of similar size and prepare to cook orange slices. Squeeze 70 grams of orange juice from the remaining oranges.

Third step

Pour 300 grams of water and 50 grams of sugar into a small milk pot and boil the orange slices over low heat.

Fourth step

During the cooking process, bitter foam will appear around the orange slices. Note that as long as floating foam appears, it must be removed. Boil the orange slices until they are completely transparent. At this point, the water becomes sticky.

Step five

Pick out the cooked orange slices and let them cool. Boiled orange syrup, pour into a bowl for later use.

Take four egg yolks, add 50g sugar, and beat the egg yolks with a manual eggbeater until the egg yolks turn white. (I beat the egg yolk with the unicorn arm. If I can't beat it, I use electric egg beater, and the extra four egg whites are used to make Pavlova cake. )

Add 30g sugar to 200g milk, heat it with low fire, and cook it until the edge of the milk pan bubbles slightly, but don't boil it. Then slowly add the egg yolk paste and beat it with an eggbeater while pouring. Be careful not to pour quickly at once, but add slowly. Too hot milk will boil egg yolk.

Step 8

After the egg yolk milk paste is stirred evenly, add 70g orange juice, pour it back into the milk pan, cook it on low heat until it thickens, and turn off the heat. Add cold water to soak 2.5 (6g) soft bright film, and melt the bright film with residual temperature.

Step 9

Slice the cool 6-inch Qifeng cake embryo and need two pieces. Cut a small circle around the cake embryo. Brush orange juice on the cake slices for later use.

Step 10

Choose 4 beautiful orange slices from 7 slices and put them on the wall of a 6-inch movable bottom cake mold to form an L shape. If there are holes in the orange slices, fill the holes with extra meat from the orange slices. If you don't fill it in, the Mu Si will leak when it falls.

Add the cooled egg yolk milk paste and stir well.

Pour half of the shredded orange paste into the mold, put a piece of Qifeng cake, and pay attention to the part with syrup facing down. Press the cake embryo completely into the mousse sauce, flush with the mousse sauce.

Finally, pour in all the mousse paste, put another cake, press down to make the cake embryo flush with the mousse paste, and refrigerate for more than 4 hours.

Put the frozen mousse cake on the cup, blow hot air from all sides with a hair dryer to remove the mold, cover it with a 6-inch thick cardboard blank or board, and turn it over quickly.

Step 16

The cake is out! The cake at this time is not perfect and needs to be decorated. Prepare hot water, a knife and a small iron spoon.

Step 17

Modify the redundant parts. After the small iron spoon is scalded with hot water, scald the uneven places in the wood wire, and the wood wire will melt and become smooth. The cut cake will be beautiful!
