Whether or not you need to blanch the squid before stir-frying depends largely on the texture of the squid itself as well as the method of cooking.
If stir-frying is used, it is recommended that the squid be blanched first. The blanching time should not be too long.
If the stewing method is used, then the squid does not need to be blanched. You can make the squid more flavorful in the slow and slow stewing process.
