How to make stir-fried rice noodles with mixed vegetable and meat slices?
Cut the meat into 1.5 mm slices, then Add a little cooking wine/table wine, white pepper, dark soy sauce, light soy sauce, sugar, a little salt, mix well and marinate for about 15 minutes.
After the oil pan is heated, add cold oil, slide the meat slices into pieces, and remove from the pan after changing color.
Leave a little bit of base oil at home, heat it up over high heat and add shredded green onions (you can also use small onions, depending on your personal preference)
After the green onions are fragrant, add bean sprouts and stir-fry.
After the bean sprouts become soft, add the leek moss (or leek or leek yellow). Stir-fry until fragrant, add a little salt, 1 tablespoon steamed fish soy sauce, 1-2 tablespoons soy sauce (I used claypot rice soy sauce, which tastes sweet) and stir-fry evenly.
Finally add the rice noodles and stir-fry with chopsticks.
Continue to add soy sauce, steamed fish soy sauce, appropriate amount of dark soy sauce, sugar, and salt to season, then add the meat slices and stir-fry evenly.
It is ready to be served after it is all colored and flavored. It also tastes great with spicy oil.
Tips
1. When adding steamed fish soy sauce and soy sauce, pour it along the edge of the pot. This way, the temperature of the pot can make their flavors evaporate better. , it will feel more like a pot.
2. Soy sauce is not necessary for claypot rice. Ordinary soy sauce can also be used, but the soy sauce for claypot rice will be fresher and taste sweeter. If you use ordinary soy sauce, increase the amount of sugar appropriately
