How to make Hua Diao Drunken Pork ?

Cut the pork into 1.5-2cm thick, 7cm wide chunks, boil cold water in a pot over high heat; skim off the blood, add green onion knots and ginger slices, cover and simmer for half an hour or so, and then turn off the heat after inserting chopsticks into the meat;
