Many red-skinned peanuts (e.g., Pepitas) are darker in color due to the high level of natural pigmentation in the peanut's red coat. It is normal for red peanut rice to turn a light red color in water after being soaked or boiled in water. Mung beans, black beans, red beans, etc. will also show similar water discoloration after being soaked in water.

Soaked in cold water for a short period of time red skinned peanuts will not lose their color, to be soaked for 15-16 hours, the water will become pink. 40 ℃ warm water also need to be soaked for 4-5 hours before the color will change.

Identify whether the peanuts are dyed method:

First, from the appearance of some of the peanuts on one end of the "small white spots", this is because the peanuts open the red coat to reveal the color inside. If the peanuts had been dyed, these "white spots" would have been colored red.

Second, because the red coat is very thin, if the peanuts are dyed, the color will penetrate the red coat, and when the red coat is peeled off, you can see that the inside of the red coat will also be light red.

Third, a wet red peanut rice and a soaked red peanut rice were placed on a piece of white paper and rubbed hard, although the white paper is wet, but there is no red on the paper. If the peanut rice after dyeing, moisture or after being wet will have decolorization phenomenon, rubbing hard on the white paper will leave red. Whether the black rice is dyed, can also be identified in this way.
