The ratio of filling to crust is as follows: if it is a 50-gram cake mold, 20 grams of crust and 30 grams of filling are generally used. This is thin and thick. Of course, you can adjust it according to your own preferences. This time, I will pack 25 grams of leather stuffing.
Sprinkle some hand powder on the ice skin, knead it flat by hand, wrap the stuffing in the middle, close it, put the beautiful and smooth side into the mold, put the cake mold flat on the workbench and gently press it out. If it sticks to your hands, please roll more hand powder on the surface of the ice skin.
This recipe won't crack the next day, as soft as it is. The finished moon cakes will be wrapped in plastic wrap and refrigerated for 2-3 days. If you use a three-dimensional mold and want to make two colors, you can first put one color in the flower core and flatten it, then put the dough in the mold and press it together to make two colors.
Matters needing attention in operation:
The slurry must be sieved;
Be sure to steam;
If you feel sticky during operation, roll your hand powder;
Hand powder must be boiled, and you can taste it yourself when frying.
Hand flour is glutinous rice flour, do not use other flour instead;
Refrigerate it. Do not freeze it. If it is thawed after freezing, the taste will be poor. Homemade food doesn't add any chemicals, so even if it is covered with plastic wrap and refrigerated, it looks like 2 days. After more than 2 days, the skin will harden and water will be lost, so the sooner you eat, the better.
Why don't you use whole milk? Because the vermicelli made of whole milk is more sticky.
